Cool Summer Chip Dip Empty
PostSubject: Cool Summer Chip Dip   Cool Summer Chip Dip I_icon_minitimeWed Jun 02, 2010 12:48 pm

Someone made something similar for a baby shower I went to.
I figured my own recipe out...

Cool Summer Chip Dip 31139_1441403792761_1163049952_31274333_5338289_n

a can of corn (or 2 cans if you really like corn!)
a can of black beans
2 fresh tomatoes chopped
1/4 of an onion chopped
2 cloves crushed garlic
fresh cilantro to taste
1 fresh avocado chopped (topped with lemon juice- add just before serving)
Salt & pepper
balsamic vinaigrette dressing (Kraft makes a good one)

Combine all ingredients & serve with tortilla chips. Super yummy.
If you have any left overs mix with cooked rotini for a yummy pasta salad. Smile

* you can also substitute the tomatoes/onion/cilantro for pic de gallo if your supermarket carries that, I did that the first time I made it and it was actually better.
